Today is cake day!
Because there are days when someone needs a sweetie, here is the recipe for a healthy oatmeal and lemon cake .
Ingredients
- Cake:
- 3 eggs ⠀⠀⠀⠀⠀⠀
- 1/2 cup of Xylitol
- 1/2 cup lemon juice + zest ⠀⠀⠀⠀⠀⠀
- 1 goat yogurt
- 3 spoons ofcoconut oil ⠀⠀⠀⠀⠀
- 2 cups of oat flour ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tablespoon powdered yeast
- Roof:
- fresh strawberries
- Xylitol
- almond chips
Preparation
1 - Preheat the oven to 180ºC;
2 - Beat the eggs with the xylitol;
3 - Add the yogurt, the lemon juice, the zest and mix;
4 - Add the coconut oil and mix everything;
5-Add the flour, baking soda and wrap everything around;
6 - Pour the dough into a greased and sprinkled mold or use a mold release agent;
7 - Bake for about 40 minutes at 180º.
8 - Break the strawberries into pieces into a frying pan or non-stick pan and add the xylitol.
9 - Bring to a boil and let it cook until reduced. Reserve.
10 - Once the cake is ready, pour the reduction over it and add some almond flakes.
