Umeboshi is a variety of plum widely used in Japan, which is fermented with salt and shiso leaves. This product is rich in citric acid, calcium, magnesium, potassium, phosphorus and a good amount of iron. The shiso leaves that usually accompany the plums are rich in chlorophyll, vitamins A, B2 and C.
